Watch experts from Spain break down a 160kg tuna using centuries-old techniques, showcasing the deep connection between sea, heritage, and kitchen. This magnificent fish was caught sustainably using the ancient almadraba method, respecting nature and quality. After the demonstration, enjoy a six-course tasting menu created by José, featuring crudos, tuna ribs made with his mother Isabel’s recipe, and José’s own version of tuna encebollado — a comforting Andalusian stew. José Pizarro's 6-course wine tasting dinner at The Swan Inn in Esher offers a refined yet relaxed Spanish dining experience. Hosted by José himself, the evening showcases his signature approach to Spanish cuisine. Alongside, guests are treated to a curated selection of six exquisite courses, each thoughtfully paired with wines from the esteemed Marqués de Vargas estate in Rioja.
